Eating healthy quality meals can be difficult when relying upon home healthcare to help prepare meals. Lack of access to fresh ingredients, limited time with the caregivers, and limited ability to cook myself, all present problems with having fresh, healthy, tasty dishes on hand. However, I’ve found some clever ways to prepare a nice meal with a limited amount of time. Enter the Crock-Pot.
During the times where I have longer visit periods, or less cares required than other visits, I will have caregivers help me chop vegetables and otherwise prepare the ingredients for many a tasty casserole. Then I’ll stash the dish in the fridge overnight, and pull it out in the morning to throw in the slow cooker during the course of the workday.
This strategy has helped me to make many a tasty meal, with leftovers that can be used for lunch at work, as well as dinner on other days. And by ordering my groceries online, from local stores that deliver, I can keep the pantry, and the fridge well stocked to prepare the next meal.
Some notable dishes I’ve prepared so far are: Crock-Pot lasagna, rosemary chicken (à la Crock-Pot), curry, pulled pork, and of course chili. If they ever feature a Crock-Pot cook-off on the the Iron Chef, I may very well be a contender against Bobby Flay.
